We caught up with Claudia Newberry at Purple Flour to find out what's hot in the world of wedding cakes in 2023. She says: "Wedding season 2023 is just round the corner and I am seeing some beautiful themes and colours on my sketch pad.
"Where the last couple of years have been dominated by semi-naked and fully buttercream covered cakes, I'm seeing a shift towards wedding cake tiers being covered in white chocolate ganache and sugarpaste again. Ganache and sugarpaste are more stable in warmer weather than buttercream, and my recommendation to couples especially with summer weddings is to consider a classically covered cake as a canvas for all decorations.
"What’s hot? I'm seeing a lot of sugar flowers and edible pressed organic flowers in gorgeous vibrant colours on my sketch pad, many more than in previous seasons, where blush, white and pale pastels were top of the list for many couples.
"Taller cake displays and the use of props to increase the presence and height of the wedding cake are also on the rise. As many more couples are more environmentally-conscious, the use of tall cake stands and/or Perspex tiers are always my recommendation and preferable to the covering of polystyrene (dummy) tiers, as they cannot be recycled and end up in landfill.
"What’s new? Macarons as table favours are requested more and more and I am offering them this year to all my couples, alongside the well-established and loved cookie favours. Macarons make a decadent little treat, can be completely tailored to the colours and theme of your wedding and the fillings I have chosen for this season are delicious… white chocolate and passionfruit, lemon and lemoncurd, Bakewell, vanilla and raspberry are the most popular ones with my couples this year."
